Ingredients

For the chicken

 

2 small chicken breasts

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic granules

1 tsp onion granules

Salt and black pepper

For the Caesar dressing

 

4 tbsp mayonnaise

2 tbsp Greek yoghurt

30g finely grated Parmesan

1 tsp Dijon mustard

1 tsp Worcestershire sauce

Juice of ½ lemon

To assemble

 

2 ciabatta rolls

2 baby gem lettuces, shredded

Parmesan shavings

Cracked black pepper


Method

 

  1. Butterfly each chicken breast by slicing it horizontally, but not all the way through, then open it out into thinner cutlets.
  2. Season both sides with the smoked paprika, garlic granules, onion granules, salt and black pepper, then drizzle over the olive oil.
  3. Heat a frying pan over a medium-high heat. Cook the chicken for around 3 minutes on each side until golden and cooked through.
  4. Meanwhile, mix together all the Caesar dressing ingredients until smooth.
  5. Remove the chicken from the pan and leave it to rest for a minute. Toss the shredded lettuce with a couple of spoonfuls of the Caesar dressing.
  6. Split the ciabatta rolls and place them cut side down in the same frying pan until lightly toasted.
  7. Slice the rested chicken.
  8. Spread more Caesar dressing onto the toasted ciabatta. Add the dressed lettuce, pile on the sliced chicken, finish with plenty of Parmesan shavings and a generous crack of black pepper.
